This is a recipe that I have a pretty interesting history with. When Steve & I were planning our wedding, he said that the only detail he cared about was having bacon at the reception. My mom’s best friend was catering for us, and she suggested these bacon chicken bites as a good option.
I immediately went home and made them because they sounded so good – and they were. We even have a small bacon grease smudge on our marriage certificate from the pastor eating one before signing it (don’t worry, we don’t mind).
Everyone who eats them loves them, and they’re just so easy to make that it’s really a no-brainer recipe for parties, tailgating, or any other time you need a good appetizer.
3 chicken breasts
1 lb bacon
2/3 cup brown sugar
2 Tbsp. chili powder
Preheat the oven to 350 degrees. Cover a baking dish in foil & spray with cooking oil. In a small bowl, mix together the chili powder & brown sugar.
Cut the bacon in thirds – I just cut the package & all, it’s the easiest way for me.
Set the bacon aside & cube the chicken. Wrap each piece of chicken in a piece of bacon & roll it in the chili mixture.
Place the wrapped pieces in the baking dish & sprinkle with the remaining sugar mixture. Bake for 20-30 minutes, or until the bacon is done.
