    I saw your Creamy Chicken Enchiladas recipe over at All She Cooks. Looks yummy! So does the rice, but I have a question about it. In your pic, the rice has corn in it. But I see no mention of rice in the recipe you linked to (a post by Jessica @ All She Cooks) or the original (@ Simply Recipes). Did you just add a can of Mexican corn when you made the rice? I guess what I’m asking is, what changes did you make? Thanks so much,

    1. Hey Cheryl! Yeah, I like to modify recipes a lot based off what I have on hand. This time I added a little frozen corn and some fresh green bell pepper. 🙂
