Though I’m not a fan of bananas or banana bread, my husband loves his Nana’s banana bread recipe. This summer, when we had some bananas that were ripe enough, we baked a loaf. It wasn’t gluten free, so I didn’t try it, but my husband, Cara, and her husband all approved.It’s a really easy recipe, just throw the ingredients together and bake!
Bread Ingredients:
1 stick butter, softened
1 cup sugar
2 eggs
2-3 ripe bananas
1 1/4 cup flour
1 tsp baking soda
1 tsp vanilla
Streusel Topping:
2 Tbsp butter
4 Tbsp brown sugar
2 Tbsp. flour
1 tsp cinnamon
Preheat oven to 350 degrees. In your mixing bowl, soften the butter and cream it together with the sugar. Mix in lightly beaten eggs. In a separate bowl, mash bananas with a fork.
Once they’re a gross mushy mess, add them to your mixture. Mix in flour, baking soda, and vanilla until well-blended. Pour into a greased loaf pan. Chop together the streusel ingredients and sprinkle on top. Bake for 1 hour, checking at 50 minutes. The bread’s done when a toothpick comes out clean.
