Pumpkin Turkey Chili

Those of you who know me know I’m a sucker for all things pumpkin…especially this time of year! I learned this recipe from one of my new church friends, Leigh, at my first ever freezer cooking party. As much as I love pumpkin, the thought of it in chili sounded weird to me at first. But, oh boy was I wrong! Don’t knock it ’til ya try it!

My recipe has a few changes from Leigh’s. I love to play with recipes until they fit our family’s needs (wants). I encourage you to do the same with any of my recipes I share!

Ingredients:

1 cup chopped onion
1/2 cup chopped green bell pepper
1/2 cup chopped yellow bell pepper
1 can black beans
1 cup corn
1 (14.5 ounce) can diced tomatoes
2 cups pumpkin purée
1 pound ground turkey, browned and drained
2 tbsp garlic, minced
1 1/2 tbsp chili powder
1 tbsp cumin
1/2 tsp ground black pepper
1 tsp salt
dash of crushed red pepper
sour cream (optional garnish)
shredded cheddar cheese (optional garnish)
fresh cilantro (optional garnish)
noodles (optional if your husband is a silly Northerner like mine)

Directions:

I’m not sure if y’all can handle this. Are you ready? Combine everything in a chili pot and simmer for 30 minutes. I know, I know…it’s a tough one. I think with a little practice you’ll catch on.

I love the simplicity and tastiness of this chili! And it’s on the healthier side of recipes you’ll see from me. It has become a regular when I make my freezer meals. It’s so quick & easy and it freezes just wonderfully! All you do is combine everything in a gallon sized ziploc baggie, suck all air out, lay flat to freeze. Defrost in fridge the day before and simmer for 30 minutes.

More on the noodles… the first time I made chili for Matt his response was “Where are the noodles?” to which I replied “I said it’s chili, Babe.”…

Apparently that’s a thing up north. Where I come from (as the Alan Jackson song plays in my head), that’s called goulash. Oh marriage…when two become one! What a glorious thing it is! And so much fun to be a part of. Matt & I love learning more about each other every day, goofy quirks and all!

But seriously… noodles… in his chili?!
